Recipe: Avocado and Sunflower Seed Pate With Salsa

Plant based eating is so much better for the body than putting 'dead food' into it! I prepare something nice for my body each day. Here is my really easy and simple Avocado and Sunflower seed pate served with a salsa.


 Recipe For Avocado and Sunflower Pate

 In a blender place two ripe avocados and a cup of soaked sunflower seeds (1 hour is fine for soaking). Add any fresh herbs you feel you might enjoy and season with tamari or shoyu if you wish. Blend until thick but not runny or creamy. Either place in a small bowl of use a 'form' to mould it into a shape for better presentation.

Serve with tomato salsa: In a bowl finely shop two ripe Roma tomatoes (any type will suffice) and add cilantro (or any other herb you like) , bell pepper, chilli and a dash of paprika  and I add lime juice to finish off the seasoning.


To make Seed Bread or Seed Snacks:

In a blender put :

3 cups of soaked sunflower seeds (and hour or so is good) ,

2 cups of flaxmeal ,

1 chopped bell pepper,

a cup of dried tomatoes (sundried is ok),

1/4 cup of Shoyo or tamari . This is optional but you may also add a heaped desert spoon of nutrtional yeast if you wish.

I also throw a handful of fresh garden herbs into the mix along with a whole tomato to give it some moisture. I pulse in ther blender adding a little water in orer to achieve a very soft mixture which is 'wet' enough to roll out on my dehydrator tray. I place a teflex mat over the mixture and use my rolling pin to achieve a nice uniform surface.

I score the damp mix with the back of a knife to create biscuity formations. I then turn my dehydrator to no more than 115F and leave on overnight - approx 8 hours - midway or first thing in the morning I turn each of the trays over so that the underside is dried and leave on for another couple of hours.

Recently I have been taken to 'finish' each tray off in the sun for 1 hour in order to achieve a nice crispy outcome.

The seed biscuits or bread is very versatile and can be used anytime as a snack on their own or add avocado or macadamia nut butter or any topping of your choice.
