There are estimated to be 55-billion farmed or manufactured animals for eating on the planet as I write this. The cost involved in farming these animals for eating is astronomical not just in $$ terms but also to the planet. Yet little known in the plant world is Curly Leaf Kale which provides more goodness across the board than a gram of beef.
Environmentalists cite meat production as one of the biggest contributors to global warming, and the United States new food pyramid, called My Plate , suggests the healthiest choice is making vegetables and fruit the biggest part of every meal by reducing consumption of animal proteins.
Kale is far by far the most nutritious of all leafy greens. It is also #2 behind garlic in the antioxidant stakes, but the seven reasons below as to why it is such an important ‘nowfood’ may just shed some new light onto the nutritional benefits of this most beautiful green vegetable.
1. Anti-inflammatory: Inflammation is the number one cause of arthritis, heart disease and a number of autoimmune diseases, and is triggered by the consumption of animal products. Kale is an incredibly effective anti-inflammatory food, potentially preventing and even reversing these illnesses.
2. Iron: Despite the myth that vegetarians are anaemic, the number of non-vegetarians with iron-deficiencies is on the rise. Per calorie, kale has more iron than beef.
3. Calcium: Dairy and beef both contain calcium, but Australia and the U.S. still has some of the highest rates of bone loss and osteoporosis in the world. Kale contains more calcium per calorie than milk (90 grams per serving) and is also better absorbed by the body than dairy.
4. Fibre: Like protein, fibre is a macronutrient, which means we need it every day. But many Australians don't eat nearly enough and the deficiency is linked to heart disease, digestive disorders and cancer. Protein-rich foods, like meat, contain little to no beneficial fibre. One serving of kale not only contains 5 percent of the recommended daily intake of fibre, but it also provides 2 grams of protein. Fibre is required to remove ‘bad’ bacteria from the body.
5. Omega fatty acids: Healthy fats play an important role in our health, unlike the saturated fats in meat. A serving of kale contains 121 mg of omega-3 fatty acids and 92.4 mg of omega-6 fatty acids.
6. Immunity:Superbugs and bacteria are a serious risk to our health. Many of these come as a result of factory farm meat, eggs and dairy products. Kale is an incredibly rich source of immune-boosting carotenoid and flavonoid antioxidants, as well as vitamins A and C.
7. Sustainable: Kale grows to maturity in 55 to 60 days versus a cow raised for beef for an average of 18-24 months. Kale can grow in most climates and is relatively easy to grow at home or on a farm. To raise one kilo of beef requires 16 kilos of grain, 11 times as much fossil fuel and more than 3000 litres of water. Next week I’ll feature some kale recipes which are so tasty and easy to do.

Those of you contemplating moving toward a completely 100% Raw diet need not fear that life will become boring. For me the transition has been beyond anything I could describe – inspirational, illuminating and uplifting.
I can feel my complete cellular body enjoys being filled with powerful plant phyto-energies. I feel the new relationship I have with RAW is enabling me to live life in a completely different paradigm; FREE from the need to be, think or act like anyone else. I feel going RAW has enabled me to begin to live my individual form based on new and inspired ideals firmly anchored in my natural relationship with all things of nature.
I sense my DNA is changing to accommodate my original state of true self.
More on this as I bring recipes forward for your contemplation and above all, sheer enjoyment. RAW is tasty and alive!!
Here is my Appetiser HiRise which frankly is more than a tasty meal for one person let alone the four who shared this recently here at RAWHQ!!
This HiRise2 comprises 5 layers.
The base is seed breadwhich I make in my dehydrator – 2 cups sunflower seeds, ¼ cup flax or linseed, 1 small onion, ¼ cup sundried or dehydrated tomatoes, 1/4 cup soaked almonds, 2 tablespoons Shoyu or Tamari – Blend until paste like. Add a few drops of water to achieve paste consistency. Lay out on heat proof board or paper and score into snack size bites.
Place in warm oven or dehydrator no more than 110F for approx 7 hrs.
First layer from the bottom Carrot and cauliflower simple Kimchi – slice carrot and cauliflower into bite size pieces and stuff into an ‘French clamp’ jar (the pull own and seal variety but a vercola will do) fill jar to just cover the vegetables with apple cider vinegar. Leave on the kitchen bench for 3-4 days until when you open the jar you get a ‘sweet ferment’ aroma. Place in the fridge or do what I do and ‘go all the way’ and leave it out until totally consumed. In this case I placed into my bullet blender which is ideal for doing small portions and ground down.
Second layer from the bottom Simple pesto but I make it with coriander and walnuts. Coriander is great for helping to remove heavy metals from the body and walnut is very alkalising or the body. I keep a tub in my refrigerator all the time.
Third layer from bottom I placed three good tablespoons of my dehydrated tomatoes into my bullet blender and reduced to paste and added the next layer to the mould.
Finally the top layer The other thing I have always available is avocado cream or guacamole. Scoop out the flesh of 2 avocados and drop it into your blender. Add the juice of two limes. Add a handful of coriander. Half a chilli and some Sea or lake salt and pepper from North Queensland!!
Then place all the elements layer by layer into your stainless steel mould. Use the little ‘tamper tool’ provided to get the layers even. In this case I garnished with chopped purples cabbage to off set the colours!! I like to serve all my Raw food on white plates and garnish accordingly.
The final move really ‘honours’ the food that has offered itself up for your nourishment.
Here is the other version I do. I call this HiRise1!
Same approach as the HiRise2. make pastes of anything you have in your fridge including totally fresh carrot, tomato, radish or whatever you fancy. I serve with my dehydrated seed bread, some extra dried tomato and some pickles which adds a lovely savoury lavour to the vegetables.
Enjoying Raw food is exciting for me and it can be for you too. Its about disengaging from any of the traditional ways of preparing food. I have all I need – proteins, fats, carbs and vital ‘whole nutrients and vitamins and minerals. ENJOY experimenting!!

Since posting a picture on the iLifeFoods FaceBookpage I have had numerous requests for the recipe of my famously delicious Spicy Pumpkin Soup.
OK..here is what you will need :
1 medium size pumpkin or the equivalent of a 1/8 slice of pumpkin per person cut into small pieces.
Macadamia oil (Olive will suffice)
1 large glove of garlic (chopped)
1 large onion (chopped)
1 Tablespoon of medium curry powder
¼ teaspoon mustard seeds
1 small red chilli
Sea salt for seasoning
Add the oil along with the aromatic condiments into a sauce pan and allow the onions to ‘sweat off’ (as they say on Master Chef). Then add the chopped pumpkin and allow to gently brown-off (my word) until you can get a nice ‘caramelly pumpkiny’ fragrance from the pot.
Add two glasses of water to leave about 4cm or an inch and a bit of pumpkin showing. Allow to simmer until the mixture thickens – normally about an hour or so. Once the pumpkin is cooked , taste and add sea salty as preferred.
Then place the cooled mixture into a blender or use a ‘bar mixed’ type blender to render the mixture to a thickish puree. Then finally plate –up , add some garlic chives to the top or coconut cream, as some one suggested and vola – you have a really tasty soup which might last a couple of nights if you don’t eat it all at once. I add a small amount of garden chives too!!
If you are bored of eating pumpkin soup, then freeze it and reheat at some later stage. I also add some of the soup to a puree of sweet potato too. Overall totally delish!!
Finally the superfood characteristics are:
The distinctive bright orange colour of pumpkin indicates it's an excellent source of that all-important antioxidant beta-carotene. Research shows that people who eat a diet rich in beta-carotene are less likely to develop certain cancers than those who fail to include beta-carotene-rich foods in their diet. Pumpkin also has another carotenoid, beta-cryptoxanthin, which may decrease the risk of lung cancer in smokers.

More sophisticated research
into chronic inflammation in the past 20-30 years has linked bodily inflammation
to obesity, diabetes, cardiovascular problems, osteoporosis, cognitive decline,
cancer and Alzheimer's. Inflammatory
responses are designed to stimulate the body's defence systems to battle and
recuperate infections and injuries.
Temporary swelling and
irritation can be side-effects of the process as the immune system invades
affected areas.
But for
many people something has gone awry in the supposedly temporary inflammatory
response, leading to a more permanent form of inflammation that has been linked
to a host of other health issues.
'Chronic Inflammation' made the
front cover of Time magazine on February 23, 2004, as the famous weekly news
journal explored what it called at the time, "circumstantial" evidence
linking inflammation to a wider pool of ailments typically experienced by
middle-aged and mature aged people.
"This concept is so intriguing
because it suggests a new and possibly much simpler way of warding off disease.
Instead of different treatments for, say, heart disease, Alzheimer's and colon
cancer, there might be a single, inflammation-reducing remedy that would prevent
all three,"
said TimeMagazine.
Nutritional
intake is almost always responsible for the presentation of an illness or
chronic biological imbalance leading to the possibility of bodily inflammation.
In short the immune system is struggling to deal with an out-of-control
biosystem - a bit like stabilisers on a ship working overtime to counterbalance
the sway of the vessel from one side to another. It's the same in the body as
the immune system works overtime to counterbalance inflammation as a result of
infections, parasites, fungus, moulds and other pathogens which have invaded the
body.
Through our
research we have found that cherries, which enjoy a high media profile, have
beneficial effects on inflammation as well as arthritis. Researchers have
discovered the reason being that cherries have distinct anti-inflammatory
properties, as reported by The American Arthritis Foundation.
'Drinking tart cherry juice
mixed with water three times a day may be beneficial for some people with
arthritis. Cherries also contain varied antioxidants, including kaempferol and
quercetin. These compounds, particularly quercetin, may have anti-inflammatory
effects that are similar to those of nonsteroidal anti-inflammatory drugs
(NSAIDs) such as aspirin and ibuprofen)'.
Emerging
evidence links cherries to not only help ease the pain of arthritis and gout,
but also to reducing risk factors for heart disease, diabetes and certain
cancers. Cherries also contain melatonin, which has been found to help regulate
the body’s natural sleep patterns, aid with jet lag, prevent memory loss and
delay the aging process.
Tart
cherries contain anthocyanins. These were found to prevent free radical damage
and inhibit cyclooxygenase enzymes better than some anti-inflammatory drugs that
work as inhibitors. It also turns out that cherries contain flavonoids and
antioxidants that have a protective effect on the stomach. It seems that nature
has thought of everything. Researchers believe there's strong evidence to add
cherries to your daily diet. But these are not always available.

Here is a recipe from Carolina who lives on the Shinshine Coast, Queensland, Australia. If you are in need of an energy boost or some extra alkalinity from the Beetroot, at the same time some natural occuring sweetness from the Sweet Potato then do have a go at this really easy recipe. All ingredients are available fresh from your local farmers market.
You will need:
1 small white onion diced
3-4 large beetroots (250g)
1 large sweet potato
1-2 tsp cummin seeds
1.25l vegetable stock
2 tbsp Apple Cider Vinegar
3 tbsp sunflower oil
coriander (cilantro) as garnish
sour cream if desired
Preparation:
Gently heat the oil in a large saucepan. Add the onions and sweat until tender (5 mins should do it). Add in the cumin seeds and allow to infuse for a minute.
Meanwhile, chop the beetroot and sweet potato into cubes. Add to the onions and stir briefly.
Add the stock and gently simmer for 15-20 minutes (until the beetroot is soft). Remove from the heat and blend with a hand held blender.
Return to the hob, add the apple cider vinegar and some chopped coriander leaves. Serve immediately.
Now here is what it looks like:

The power of the tropical fruit can only be described as awesome!! The
Green Papaya or Paw Paw contains very high levels of the enzyme called papain - also known as papaya proteinase I .
Since time immemorial the Paw Paw, sometimes called Papaya (carica papaya),
has been at the centre of options for healing solutions, but more importantly a
staple diet for many of the planets tropical indigenous peoples. Papain is the
living enzyme within the flesh of both a green and ripe Paw Paw, however the
green paw paw is known to have higher amounts of papain and lower amounts of
naturally occurring sugars where-as a ripe paw paw has the reverse.
The papaya (from Carib via Spanish), papaw or pawpaw is the fruit of the plant Carica papaya, in the genus Carica.
It is native to the tropics of the Americas, and was first cultivated
in Mexico several centuries before the emergence of the Mesoamerican
classic cultures.
Carica papaya was the first fruit tree to have its genome deciphered.
Paw Paw -Papaya TreeMature Green Papaya showing white seeds
Papain is also known as a proteolytic enzyme- a protein scavenger and is
being used for both internal and external healing purposes. Internally
as a food supplement to aid in the process of digestion and 'protein
breakdown' in the stomach prior to the chyme (food slurry) entering the
small intestine - and externally as a paste or lotion to assist in the
healing of skin affected by burns, septic ruptures or infected sores.
Without doubt this has to be the
'fruit of the moment' - I estimate 1 in every 2 people - perhaps more
than 50% of the entire population experience digestion problems arising
from an over consumption of protein - too much red meat, pork, chicken
and heavy proteins like cheeses etc. This can bring about gastric
reflux, heartburn, indigestion and general digestive discomfort.
Introducing a small amount of green papaya powder seems to aid in the
break down of difficult to digest foodtypes.
In my own case, 40 years of chronic
gastric reflux was relieved the very first night I began taking green
papaya powder so much so that after a while I began to feel normal
again. I did however recognise that a diet of dairy products whilst
growing up in New Zealand did not help my digestion. I no longer need
dairy products nor heavy red meat proteins, but the effects of taking
green papaya have been immeasurable largely because all my food now is
fully broken down thus my asorption levels have increased. This means my
body is being 'fed' efficiently by the nutrients my intestine is now
absorbing. My kidneys, liver and cardiovascular functions are great and I
have so much more energy. I have no aches or pains in my muscles or
joints because there is no acid build up any longer.
Check out the iLifeFoods Green Papaya Powder which is 100% Australian and pesticide free. We use the green
skin, flesh and seeds in our product. We also add 5% of the Australian
Rain Plum which adds a small antioxidant boost to the powder. You can
take it any time but it seems to work better with the main meal of the
day - ususally dinner time which means the stress comes out of your
digestive metabolism, food is digested and nutrients absorbed better
during sleeping hours. BUY HERE !!
and if you have any further questions about the roll green papaya
powder can play in your life and good health, please don't hesitate to send me a message.

When
did you last look at exactly what you were eating and what is
motivating you to eat? Are you being enticed by the colourful
advertising by the major supermarkets and perhaps choosing foods that
aren’t in your best interest?
There certainly is a lot of ‘food confusion’ existing
right now and in our busy life it is probably a good time to stop and
ask yourself some questions about food and your lifestyle..
•Can you eat out less and prepare more of your own food ?
•Can you be sharing more food in a 'sit-down' environment with friends or family?
•Are you eating to support your immediate and long-term health needs?
These may appear basic questions to some of you but for others this 'food confusion'exists.
For instance mainstream media does not promote an awareness around the need to take in a range of 'leafy green vegetables' daily.
The
whole idea of raw food, light on protein ie. less heavy red meats, pork
and cheeses, along with a mix of healthy grains ie. more wheat free!!
is abhorrent to mainstream media because of the need to continue to
support an industry and an agenda based food pyramid.
So its time now to step into your own 'food power' and maybe say 'enough is enough'!!!
Here are some great ways to become really empowered around your immediate and long term health.
Reach out and ask more questions of your friends and family, read more, sign up for food newsletters or online blogs.
When in doubt 'Google' for information which sits right for you.
Download the 80/20 Alkaline/Acid Food Chart at the bottom of the page.
Also consider spending a couple of hours either a Saturday or Sunday morning shopping at your local farmer's or producer markets
Food Focus: Greens
Leafy
greens are some of the easiest and most beneficial vegetables to
incorporate into your daily routine. Densely packed with energy and
nutrients, they grow upward to the sky, absorbing the sun’s light while
producing oxygen. Members of this royal green family include kale,
collard greens, Swiss chard, mustard greens, arugula, dandelion greens,
broccoli rabe, watercress, beet greens, bok choy, green cabbage, spinach
and broccoli. Right now at your local farmers market crinkly leaf green
kale is available. In fact you might be interested in knowing that kale
is number 2 after garlic in the antioxidant stakes!!!
How do greens
benefit our bodies? They are very high in calcium, magnesium, iron,
potassium, phosphorous and zinc, and are a powerhouse for vitamins A, C,
E and K. They are crammed full of fibre, folic acid, chlorophyll and
many other micronutrients and phytochemicals. Their green colour is
because of chlorophyll levels - sometimes known as liquid sunshine.
In
traditional Asian medicine, the color green is related to the liver,
emotional stability and creativity. Greens aid in purifying the blood,
strengthening the immune system, improving liver, gall bladder and
kidney function, fighting depression, clearing congestion, improving
circulation and keeping your skin clear and blemish free.
Leafy
greens are the vegetables most missing from the average diet, and now
you can learn how to prepare them. Start with the very simple recipe
below. Then each time you go to the market, pick up a new green to try.
Soon you’ll find your favorite greens and wonder how you ever lived
without them.
