 Right now I'm feeling a sense of freedom and liberation around the changes taking place with my diet. At the same time I am also coming understand how powerful religious, political, social and cultural forces are in determining what we should eat.

 I was bought up in New Zealand and post war was virtually force-fed dairy products in order to support the emerging dairy industry there. So too bread and wheat products to help get the South Island wheat industry up and running after WWII .As a consequence I experienced what I now look back on as horrible digestive issues which I know impacted on my ability to feel good. The right nutritional information wasn't getting through to my cellular system.

 Now, quite some years later I might add, I am over the need to eat what is on offer via the supermarket or what is shown on TV or in the newspapers. I eat what I know my body loves and enjoys.

 I am now enjoying pampering myself and see creating food as part of my daily meditation where I can offer thanks to the earth for all she has done and continues to do for me

 I want to show you some of what I have eaten in the last 24hrs - each morning anyway I start my day with a fruit/vege smoothie which includes some of the iLifeFoods dried VegeShot or VegeShot Smoothie Booster. I love little raw treats more and more. What I did the other night was an avocado creams with garden herbs et al on top of cucumber slices!!!. I like something special too as my main course - a Zuccipasta - raw zucchini pasta with a RAW tomato sauce with the same ingredients I used when I used to prepare a cooked tomato sauce. Finally I like to do a RAW sweet which is really quite different to a cooked sweet - this time a new twist on an oldie but a goodie - Coconut Kefir with cacao powder and strawberries topped off with coconut palm  sugar - makes the old chocolate mousse look a tad tired doesn't it ?

 

Tropical Fruit Smoothie           Avocado cream on sweet cucumber               Zuccipasta with RAW tomato sauce

Tropical Fruit Smoothie : Blend a frozen banana with mango, paw paw (papaya) , pineapple, 1 sachet of VegeShot Smoothie Boost Serve garnished with a twist of kale.

Avocado Cream served on Sweet Lebanese  Cucumber : 2 creamy avocados into a blender with the juice of a lime, handful of garden herbs -basil, majoram - pinch of sea salt . Blend and serve on slithers of cucumber and topped with a baby grape tomato and drizzle with macadamia oil and add a grind of pepper.

Zuccipasta with RAW Tomato Sauce: Firstly blend your sauce - 4 largish Roma tomatoes , large pinch of dried Italian herbs, glove of garlic, touch of red onion,fresh basil, 1 small red chilli, pinch of seasalt and ground pepper and small sprinkle of coconut palm sugar. Blend together until smooth and creamy. Set aside. take two largish zucchini or courgette and using a small Gefu Spirelli Spiral Cutter.This is a great little device into which you slide your courgette or zucchini or cucumber..it will also do a sweet potato if you clean and prepare it to fit neatly into the end.

I like to spend a moment giving some thought to how I can introduce a safe sweet finishing touch to my meals. Sometimes its dried fruit based and sometimes its something just a wee bit special - such as a beauty I created the other night .

Coconut Kefir with cacao powder and strawberries and topped with a sprinkle of coconut palm  sugar. Put 6 strawberries in the blender along with several good dollops of the creamy kefir mixture, add a teaspoon of raw cacao powder and blend together until a smoothy creamy consistency. It turned out sensationally when served in a small liqueur glass and by the way you might care to add a drop or two of your fav liqueur into the mix to give it an added zing  if you wish.

So what is Coconut Kefir I hear you ask ? Well its two 600ml cans of Organic coconut cream into an airtight jar into which you add one 'Natures Own' Kefir starter sachet. Stir it thoroughly and  let it sit on the kitchen bench for a few days until it starts to go nice and sour and then put it into the fridge where it will solidify. This is the best stuff for helping to get new flora back into the tummy AND its not milk based.

Kefir has its origins in the middle east where the culture is added to cows and goats milk to create a form of cultured yogurt which helps in the process of digestion and maintaining stomach flora.

Raw food with a balance of fats, carbs and proteins and has been  a transformational experience for me . I was a vegan for many years but was still taking some light protein from time to time  like fish and chicken. When I dropped flesh of any kind I began to feel even better and more alert. Then when I began to just eat non cooked vegetables I found my energies and general state of body and mind slipped up another notch.

It is very simple to slot one's brain into gear around preparing raw food but for many its a difficult task when all that 'seems' to be on offer is the usual 3-dimensional food of meat and three veg and plenty out of a packet.

Healing Benefits of Beetroot Proved!!

The is a growing demand for more empirical evidence that ‘naturally grown’ fruit and vegetables play a major role in healing the body of basic to chronic ailments.

Common sense tells us that when we eat right our body reacts positively but in the production of ‘concentrated nutrient’ products we cannot say that the beetroot for-instance aids in the healing of the body of cancers or other dis-ease known to bring about cellular degradation.

However we can direct you, the informed and conscious reader to studies which support the notion that ‘good natural food=good natural health’. I posted the following study findings some time ago but feel its worthy now to update and repost.

Here are the details which supports that beetroot IS GOOD for you!!

A study undertaken by Austrian academics supports the role beetroot can play as an anti-inflammatory when treating the affects of cancer.

The study entitled :  In vitro Effects of Beet Root Juice on Stimulated and Unstimulated Peripheral Blood Mononuclear Cells attributed to :
1Christiana Winkler, 1Barbara Wirleitner, 1Katharina Schroecksnadel 2Harald Schennach and 1Dietmar Fuchs 1Division of Biological Chemistry, Biocentre, Innsbruck Medical University, Ludwig Boltzmann Institute of AIDS-Research, Innsbruck 2Central Institute of Blood Transfusion and Immunology, University Hospital.

Results of this study arrived at the following statement of conclusion:

Intake of fruits and vegetables rich in antioxidants can reduce the incidence of cancer and coronary heart disease in humans. Exceptional antioxidant activity of beetroot extracts has been reported. Likewise in animal models, e.g., extracts of red beetroot Beta vulgaris var. rubra revealed significant tumour inhibitory effects. Red beetroot concentrate is universally permitted as a food ingredient. In this study, effects of a commercially available beetroot juice on freshly isolated human peripheral blood mononuclear cells stimulated with the mitogens phytohaemagglutinin and concanavalin A were investigated in vitro. Tryptophan degradation and neopterin formation were monitored in culture supernatants to determine effects of test substances on immunobiochemical pathways which both are induced by the pro-inflammatory cytokine interferon-g. Compared to unstimulated cells, the mitogens induced significant formation of neopterin and degradation of tryptophan which is reflected by increasing concentrations of kynurenine together with diminished tryptophan levels in supernatants. Addition of beetroot extracts significantly suppressed these mitogeninduced changes, e.g. the rate of neopterin production as well as tryptophan degradation was dosedependently suppressed.

Our data shows that beetroot extract is able to counteract pro-inflammatory cascades in peripheral blood mononuclear cells. Because inflammation is strongly involved in the development and progression of several clinical conditions including coronary heart disease and cancer, beneficial effect of beetroot extract may relate to this anti-inflammatory capacity.

An independent study undertaken in the US also showed the following in regards to the consumption of juice concentrates:

“In this study, using a randomized, double-blinded, placebo-controlled design, of 117 healthy individuals, we showed that a fruit and vegetable concentrate resulted in an elevation in micronutrients (as measured by beta-carotene, vitamin C, and alpha-tocopherol) and reduced systemic inflammatory load,” wrote the researchers.

“Although the long-term implications of these findings are currently unknown, the close relationship between chronic inflammation and poor human health, suggests such a juice concentrate is a beneficial addition to the habitual diet in support of human health,” they added.

After 60 days of consuming the fruit and vegetable capsules, the researchers report a reduction in levels of Monocyte Chemotactic Protein-1 (MCP-1) of about 35 per cent, Macrophage Inflammatory Protein 1-beta (MIP-1b) of about 16 per cent, and Regulated upon Activation, Normal T cell Expressed and Secreted (RANTES) levels of about 21 per cent, compared with placebo.

Really easy ‘Spicy Pumpkin Soup’ filled with Beta-Carotene

Since posting a picture on the iLifeFoods FaceBook page  I have had numerous requests for the recipe of my famously delicious Spicy Pumpkin Soup.

OK..here is what you will need :

1 medium size pumpkin or the equivalent of a 1/8 slice of pumpkin per person cut into small pieces.

Macadamia oil (Olive will suffice)

1 large glove of garlic (chopped)

1 large onion (chopped)

1 Tablespoon of medium curry powder

¼ teaspoon mustard seeds

1 small red chilli

Sea salt for seasoning

Add the oil along with the aromatic condiments into a sauce pan and allow the onions to ‘sweat off’ (as they say on Master Chef). Then add the chopped pumpkin and allow to gently brown-off (my word) until you can get a nice ‘caramelly pumpkiny’ fragrance from the pot.

Add two glasses of water to leave about 4cm or an inch and a bit of pumpkin showing. Allow to simmer until the mixture thickens – normally about an hour or so. Once the pumpkin is cooked , taste and add sea salty as preferred.

Then place the cooled mixture into a blender or use a ‘bar mixed’ type blender to render the mixture to a thickish puree. Then finally plate –up , add some garlic chives to the top or coconut cream, as some one suggested and vola – you have a really tasty soup which might last a couple of nights if you don’t eat it all at once. I add a small amount of garden chives too!!

If you are bored of eating pumpkin soup, then freeze it and reheat at some later stage. I also add some of the soup to a puree of sweet potato too. Overall totally delish!!

The distinctive bright orange colour of pumpkin indicates it's an excellent source of that all-important antioxidant beta-carotene. Research shows that people who eat a diet rich in beta-carotene are less likely to develop certain cancers than those who fail to include beta-carotene-rich foods in their diet. Pumpkin also has another carotenoid, beta-cryptoxanthin, which may decrease the risk of lung cancer in smokers.

More sophisticated research into chronic inflammation in the past 20-30 years has linked bodily inflammation to obesity, diabetes, cardiovascular problems, osteoporosis, cognitive decline, cancer and Alzheimer's. Inflammatory responses are designed to stimulate the body's defence systems to battle and recuperate infections and injuries.

Temporary swelling and irritation can be side-effects of the process as the immune system invades affected areas.

 But for many people something has gone awry in the supposedly temporary inflammatory response, leading to a more permanent form of inflammation that has been linked to a host of other health issues.

 'Chronic Inflammation' made the front cover of Time magazine on February 23, 2004, as the famous weekly news journal explored what it called at the time, "circumstantial" evidence linking inflammation to a wider pool of ailments typically experienced by middle-aged and mature aged people.

 "This concept is so intriguing because it suggests a new and possibly much simpler way of warding off disease. Instead of different treatments for, say, heart disease, Alzheimer's and colon cancer, there might be a single, inflammation-reducing remedy that would prevent all three," said TimeMagazine.

 Nutritional intake is almost always responsible for the presentation of an illness or chronic biological imbalance leading to the possibility of bodily inflammation. In short the immune system is struggling to deal with an out-of-control biosystem - a bit like stabilisers on a ship working overtime to counterbalance the sway of the vessel from one side to another. It's the same in the body as the  immune system works overtime to counterbalance inflammation as a result of infections, parasites, fungus, moulds and other pathogens which have invaded the body.

  Through our research we have found that cherries, which  enjoy a high media profile, have beneficial effects on inflammation as well as arthritis. Researchers have discovered the reason being that cherries have distinct anti-inflammatory properties, as reported by The American Arthritis Foundation.

Coke Kola and its horrific affects on the body!!!

Virtually everywhere now you will be subjected to products which can contribute to the deterioration of the human immune system.

No to Coke Each year  Americans drink the equivalent of nearly 600 cans of soda (soft) drink each containing an average of ten, yes that’s 10, teaspoons of refined white sugar.Similiar per capita data exists for Australia.

Every day the Coca Cola Company sells in excess of one billion cans of soft drink on Planet Earth. Each can contains an average of ten teaspoons of pure refined white sugar along with a range of other nefarious chemicals, most shown to lead to premature death as a result of numerous avoidable illnesses. (Put aside the affects of aluminium mining for the moment)

Here is what happens to your body for a full 60 minutes after you have consumed a can of Coca Cola. This is frightening so hold onto your seat:

In The First 10 minutes: 10 teaspoons of sugar hit your system.  You don’t immediately vomit from the overwhelming sweetness because phosphoric acid cuts the flavour allowing you to keep it down.
20 minutes
: Your blood sugar spikes, causing an insulin burst. Your liver responds to this by turning any sugar it can get its hands on into fat. (There’s plenty of that at this particular moment)

: The caffeine’s diuretic properties come into play. (It makes you have to pee.) It is now assured that you’ll evacuate the bonded calcium, magnesium and zinc that were headed to your bones as well as sodium, electrolyte and water.

: As the rave inside of you dies down you’ll start to have a sugar crash. You may become irritable and/or sluggish. You’ve also now, literally, pee'd away all the water that was in the Coke. But not before infusing it with valuable nutrients your body could have used for things like even having the ability to hydrate your system or build strong bones and teeth.

But there is more.

Let’s take a look at some of the other major components of a can of soft drink:

Phosphoric Acid: This can interfere with the body's ability to utilise calcium, which may lead to osteoporosis ( and thinning of bone density) and softening of the teeth.

Sugar: It is a proven fact sugar can increase insulin levels, which may lead to high blood pressure, high cholesterol, heart disease, diabetes, weight gain, premature aging and other side effects. Most soft drinks include over 100 percent of the RDA of sugar. Take the Ayurvedic approach- a balance of sweet, sour and savoury. Suagr is also know to 'feed' the acidic needs of cancer related fungus and bacteria. Have cancer ?? Remove all high GI related sugars from your diet.

Aspartame: This chemical is used as a sugar substitute in diet soft drinks. There are nearly 100 documented health side effects associated with aspartame consumption including brain tumors, birth defects, diabetes, emotional disorders and epilepsy/seizures.

Caffeine: Caffeinated drinks can cause jitters, insomnia, high blood pressure, irregular heartbeat, elevated blood cholesterol levels, vitamin and mineral depletion and may cause breast lumps, birth defects, and perhaps some forms of cancer.

I see dozens of people each week, most looking for easily obtainable solutions to health issues. Food Focus: Greens 

Leafy greens are some of the easiest and most beneficial vegetables to incorporate into your daily routine. Densely packed with energy and nutrients, they grow upward to the sky, absorbing the sun’s light while producing oxygen. Members of this royal green family include kale, collard greens, Swiss chard, mustard greens, arugula, dandelion greens, broccoli rabe, watercress, beet greens, bok choy, green cabbage, spinach and broccoli. Right now at your local farmers market crinkly leaf green kale is available. In fact you might be interested in knowing that kale is number 2 after garlic in the antioxidant stakes!!!

 How do greens benefit our bodies? They are very high in calcium, magnesium, iron, potassium, phosphorous and zinc, and are a powerhouse for vitamins A, C, E and K. Greens aid in purifying the blood, strengthening the immune system, improving liver, gall bladder and kidney function, fighting depression, clearing congestion, improving circulation and keeping your skin clear and blemish free.

Then each time you go to the market, pick up a new green to try. Soon you’ll find your favorite greens and wonder how you ever lived without them.

Exciting Recipe: Shiitake and Kale

Prep Time: 2 minutes

Cooking Time: 10 minutes

Yield: 4 servings

Ingredients : 300gms shiitake mushrooms, 1 tablespoon olive oil, 1-2 cloves crushed garlic, 1 bunch kale, sprinkle of pine nuts, a  pinch of Australian Desert Lake Salt and carrot to garnish.

 Directions: 1.  Warm oil in pan on medium heat with minced garlic until aromas of garlic are released, about 2-3 minutes.    2.      Add chopped shiitake mushrooms, stir-fry for 5 minutes.  3.     Add chopped kale, stir-fry for a couple of minutes. 4.     Add a splash of water and pinch of salt to pan, cover and let steam for 4 minutes.

This is a really simple stir fry that is not only quick  to prepare but provides the body with so many benefits.

This is so delicious and so so amazingly healthy and above all - so simple.

‘Lycopene protects against radiation affects’

As the currant situation at Japan’s Fukushima nuclear reactors remains uncertain it is entirely conceivable that ‘fall-out’ will spread around  the world via the multitude of ‘jet streams’ which traverse the planet daily.
